Chitin is the material of an insect's carapace, but in Dwarf Fortress it is largely identical to leather in all but name. In theory, weapons made from chitin will do the same damage as those made from iron, but in practice such things will not exist without the aid of custom reactions.
Since in DF, this only comes from butchering giant insects like giant cave spiders and giant desert scorpions, it is quite valuable (x10 multiplier) as a raw material, especially compared to most other leathers. Caravans occasionally carry chitin as a trade good, but especially if requested from a liaison.
