as far as economy goes eggs are a very good source of food 1 egg = 1 meal.  with a low cost to start with, starting out with 5 hens and rooster on embark is an easy way to feed a fortress just starting out.  However turkeys seems to be a better option, they have larger bodies (and there for more butcher-able meat) and have a larger average clutch sizes (10-14)(a 4 egg difference compared to 10 egg difference in chickens) so with the same number of turkeys you should average a larger number of eggs. Chickens however do live longer.  Given that if you do not collect the eggs you can end up with a lot more birds every year, life span should not be a problemThe alligator farm has never looked so tantalizing either, with clutch sizes from 10-30, max ages of 100, fast growth rates, and large butcher-able bodies would make for an ideal farming animal.

Please be warned that keeping of chickens will cause the combat log to fill up with lots of fights between chickens though the mortality of these fights is almost nonexistent (has not happened once in a fortress of mine) not collecting eggs is a good way to also kill your frame rate and max out on 200 pets in just a few years.
  
Be warned that large groups of chickens will require a significant amount of space for them to roam, otherwise they will quickly get into fights; additionally, failing to collect eggs may rapidly lead to a [[catsplosion#Birdsplosion|chickensplosion]].

For some reason, roosters give a skull more often than anything else. This may be because the butcher holds it by the throat when cut. It's a well known fact that chickens can run even after being beheaded. For more info see [[Domestic_animal|domestic animals' page]]
