Thrones (or chairs, when made of wood) are used to create offices for nobles. They are also used in dining rooms -- you must have one throne per table, to allow dwarves to sit while they eat. There is no advantage to making thrones out of wood or stone; all furniture functions the same regardless of its material.

Also, the build menu option c Seat will allow you to place thrones and chairs.
