Bolts are the ammunition fired by crossbows and crossbow traps.

Bolts can be made out of bone, wood, or metal, and will be carried by any dwarf who is carrying a crossbow. A dwarf who wants to carry bolts will pick up a quiver and use it if one is available.

Metal bolts are the most damaging, and are considered too valuable to be wasted on practice. Dwarves will carry metal bolts in their quivers, but will not fire them at archery targets. Wood and bone bolts will be used in practice, though they are still effective in combat.
