Wikipedia article

This article is about an older version of DF.
A huge predatory mammal covered in white hair. It hunts the shores along tundra and glaciers.

Polar bears are large arctic predators. They are generally more interested in eating or drinking your dwarves' supplies than eating or drinking your dwarves, however they will path into your fortress in search of your food stockpiles. Captured polar bears can be tamed, and trained for hunting or war, or kept as high-value pets. Tame polar bears can be bred as livestock for your meat industry; they produce a fair amount of mid-value meat when butchered, and their non-grazing nature makes them relatively easy to manage, though they do take two years to reach full adult size.
